Ingredients/Components

  • cinnamon - 1 item
  • sour cream - 1/3 c
  • water
  • lemon juice - 1 Tbsp
  • whole cloves - 3 item
  • cinnamon stick - 1 item
  • cranberry juice cocktail - 1 c
  • fresh raspberries or strawberries or 2 10 oz - 2 c
  • carton raspberry or strawberry yogurt - 8 oz

How to make chilled berry soup:

Place berries and 1/4 cup water in blender; puree until smooth. In large saucepan, combine pureed fruit, remaining 1 1/4 cups water, cranberry juice, sugar, cinnamon stick and cloves. Cook over medium heat until mixture begins to boil. Remove from heat. Cool.

Strain soup into large bowl. Add lemon juice and yogurt, whisk until well blended or blend in blender. Cover, refrigerate until cold. Pour into individual serving dishes. Top each with sour cream and sprinkle with cinnamon. Makes 9 (1/2 cup) servings.
