Ingredients/Components
- salt - 1/2 tsp
- baking powder - 2 tsp
- boiling water - 1/2 c
- shortening - 1/2 c
- dark brown sugar - 1/2 c
- raisins - 1/2 c
- sifted all-purpose flour
- egg unbeaten - 1 item
- lemon extract - 1 tsp
- finely shredded carrots - 1/2 c
How to make carrot cookies:
Pour boiling water over raisins. Soak 5 minutes; drain. Combine sugar, shortening, egg and lemon extract in mixing bowl; beat well. Stir in carrots and drained raisins.
