Ingredients/Components
- sugar - 1 c
- vanilla - 1/2 tsp
- butter - 1/2 c
- dark corn syrup - 3/4 c
- light cream - 1 c
- finely chopped nuts - 1/2 c
How to make caramels:
Butter sides of a heavy 2-quart saucepan. In it, combine sugar, corn syrup, butter and 1/2 cup of the cream. Bring to a boil over low heat, stirring constantly. Slowly stir in the remaining 1/2 cup of cream. Cook over low heat to medium ball stage, stirring almost constantly. Remove from heat; add nuts and vanilla. Pour in the buttered 9 x 5 x 3-inch pan. Mark into 32 squares, when partially cool. When cold, cut and wrap. Store in an airtight container.Recipe categories: Desserts, Candy, American.
