Ingredients/Components

  • sugar - 1/3 c
  • vanilla extract - 1 tsp
  • salt - 1 tsp
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • vegetable oil - 2 Tbsp
  • egg - 1 item
  • all-purpose flour - 2 c
  • unsweetened orange juice - 1/4 c
  • vegetable cooking spray - 1 item
  • carton low-fat vanilla yogurt - 1 oz
  • blueberries, thawed - 1 c

How to make blueberry yogurt muffins:

Combine first 5 ingredients in a large bowl. Make a well in the center of mixture. Combine orange juice and next 4 ingredients; stir well. Add to dry ingredients, stirring just until moist. Gently fold in blueberries.

Divide batter evenly among 12 muffin cups, coated with cooking spray. Sprinkle 1 tablespoon of sugar over muffins. Bake at 400° for 18 minutes or until golden. Remove from pans and cool on wire rack. Yields 1 dozen.
