Blueberry yogurt muffins
Ingredients/Components
- sugar - 1/3 c
- vanilla extract - 1 tsp
- salt - 1 tsp
- baking powder - 1 tsp
- baking soda - 1 tsp
- vegetable oil - 2 Tbsp
- egg - 1 item
- all-purpose flour - 2 c
- unsweetened orange juice - 1/4 c
- vegetable cooking spray - 1 item
- carton low-fat vanilla yogurt - 1 oz
- blueberries, thawed - 1 c
How to make blueberry yogurt muffins:
Combine first 5 ingredients in a large bowl. Make a well in the center of mixture. Combine orange juice and next 4 ingredients; stir well. Add to dry ingredients, stirring just until moist. Gently fold in blueberries.Divide batter evenly among 12 muffin cups, coated with cooking spray. Sprinkle 1 tablespoon of sugar over muffins. Bake at 400° for 18 minutes or until golden. Remove from pans and cool on wire rack. Yields 1 dozen.
