Blueberry streusel muffins
Ingredients/Components
- sugar - 1/2 c
- cinnamon - 1/2 tsp
- vanilla - 1 tsp
- milk - 1/2 c
- salt - 1/2 tsp
- flour
- brown sugar
- baking powder - 2 tsp
- chopped walnuts - 1/4 c
- margarine - 4 Tbsp
- large egg, beaten - 1 item
- fresh blueberries
How to make blueberry streusel muffins:
Streusel Topping:3 Tbsp. brown sugar1 Tbsp. flour1/4 c. chopped walnuts2 Tbsp. margarine1/2 tsp. cinnamon Sift together the flour, baking powder and salt. In a large bowl, cream margarine with sugar until fluffy. Beat in egg and vanilla. Stir in the flour mixture alternately with milk. Mix just enough to moisten dry ingredients and distribute evenly; do not overmix. Fold in blueberries. Spoon batter into muffin tins lined with papers, filling about 2/3 full.Topping: Cut margarine into dry ingredients and add walnuts. Sprinkle topping on each muffin. Bake at 400° for 20 minutes or until top springs back when gently pressed. Serves 12; 204 calories per muffin.
