Blueberry cheese pie
Ingredients/Components
- sugar
- vanilla - 1 tsp
- cornstarch - 2 Tbsp
- water - 1 c
- can sweetened condensed milk - 14 oz
- lemon juice - 1/4 c
- blueberries - 2 c
- cream cheese, softened - 8 oz
- baked 9-inch pie shell - 1 item
- crushed blueberries - 1/2 c
How to make blueberry cheese pie:
Glaze:1/2 c. sugar2 Tbsp. cornstarch1 c. water1/2 c. crushed blueberries Whip cream cheese until fluffy. Gradually add milk, blending well. Add lemon juice and vanilla. Fold in blueberries. Pour into pie shell and chill 2 to 3 hours. Combine glaze ingredients in small saucepan and cook over medium heat until mix thickens and boils. Stir and cook until clear. Strain and cool clear purple gel. Cover chilled cream cheese with cooled glaze. (You will have glaze leftover; cover and refrigerate to use on pancakes or ice cream.)
