Ingredients/Components

  • granulated sugar - 3/4 c
  • vanilla flavoring - 1/2 tsp
  • all-purpose flour - 1/3 c
  • dash of salt - 1 item
  • Carnation milk - 2 c
  • eggs, separated at room temperature - 4 item
  • to 45 vanilla wafers - 35 item
  • to 6 medium sized fully ripened bananas, sliced - 5 item

How to make banana pudding:

Combine 1/2 cup sugar, flour and salt in top of double boiler. Stir in 4 egg yolks and milk. Blend well. Cook over boiling water, stirring constantly until thickened. Reduce heat and cook stirring occasionally for 5 minutes. Remove from heat and add vanilla.

Place small amount on bottom of 1 1/2-quart dish. Cover with layer of vanilla wafers. Top with sliced bananas and continue to layer wafers, bananas and custard, ending with custard.

Beat egg whites until stiff and gradually add remaining 1/4 cup of sugar. Beat until stiff peaks form. Spoon on top of pudding and spread to cover entire top of pudding. Bake at 425° for 5 minutes or until lightly browned. Makes 8 servings.
