Ingredients/Components

  • sour cream - 1/2 c
  • salt - 1/2 tsp
  • margarine - 2 Tbsp
  • lemon juice - 1 Tbsp
  • pepper - 1/8 tsp
  • mayonnaise - 1/2 c
  • thinly sliced celery - 1 c
  • sliced mushrooms - 1/2 c
  • slivered almonds - 1/2 c
  • cubed, cooked chicken - 2 c
  • crushed potato chips - 1/4 c

How to make baked chicken salad:

In a large skillet, cook the margarine, celery and onion over medium heat until tender. Remove from heat. Stir in next 5 ingredients until well blended. Add chicken, almonds and mushrooms. Toss to coat well. Spoon into 1 1/2-quart casserole. Sprinkle with potato chips. Bake in a 325° oven for 25 to 30 minutes. Makes 4 to 6 servings.
