Artichoke rice salad
Ingredients/Components
- chicken Rice-A-Roni, cook as directed - 1 pkg
- green pepper, chopped - 1/2 item
- jars marinated artichokes, drain, chop and reserve liquid - 2 item
- mayonnaise - 1/3 c
- salt and pepper to taste - 1 item
- green onions, chopped - 3 item
- to 10 pimento green olives, chopped - 8 item
- curry powder - 1/2 tsp
- oil from 1 jar artichokes
How to make artichoke rice salad:
Mix onions, pepper, olives and artichoke hearts with cooked Rice-A-Roni. Add salt and pepper. Mix mayonnaise, oil from artichokes and curry. Pour into rice mixture. Refrigerate overnight. Add 1 cup crab meat, 1 cup shrimp or 1 cup cooked chicken. Makes 10 to 12 servings.Recipe categories: Salads, Side dish, Rice.
