Apricot salad
Ingredients/Components
- sugar - 3/4 c
- cream cheese - 3 oz
- Cool Whip - 8 oz
- egg, beaten - 1 item
- pineapple juice - 1/2 c
- small can crushed pineapple, drained - 1 item
- mini marshmallows - 2 c
- large apricot jello - 1 item
- or 3 sliced bananas - 2 item
How to make apricot salad:
Mix jello according to directions. When beginning to gel, add marshmallows, bananas and crushed pineapple. Let set.Add together, in top of double boiler, egg, pineapple juice and sugar. Cook until thickens. Cool. After it is cold, add Cool Whip and cream cheese. Blend and spread on top of jello.
Note: Chopped pecans may be sprinkled on top.
