Ingredients/Components

  • sugar
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • soda - 1/2 tsp
  • baking powder - 2 tsp
  • egg - 1 item
  • shortening - 2 Tbsp
  • powdered sugar - 1/2 c
  • orange juice - 1/2 c
  • chopped dried apricots - 1 c

How to make apricot nut bread:

Soak apricots in 1 cup of warm water for 20 minutes. Cream together 1 cup sugar, shortening and egg. Stir in 1/4 cup sugar and orange juice. Add flour, baking powder, soda and salt. Mix well. Drain and stir in apricots. Add nuts. Bake in a greased and floured loaf pan at 350° for 60 to 65 minutes. Cool 10 minutes in pan.

Make a glaze by adding some orange juice to the powdered sugar to thin. Punch holes in hot bread and spoon glaze on. (May also be made as small muffins.)
