Apricot nut bread
Ingredients/Components
- sugar
- salt - 1 tsp
- chopped nuts - 1 c
- flour - 2 c
- soda - 1/2 tsp
- baking powder - 2 tsp
- egg - 1 item
- shortening - 2 Tbsp
- powdered sugar - 1/2 c
- orange juice - 1/2 c
- chopped dried apricots - 1 c
How to make apricot nut bread:
Soak apricots in 1 cup of warm water for 20 minutes. Cream together 1 cup sugar, shortening and egg. Stir in 1/4 cup sugar and orange juice. Add flour, baking powder, soda and salt. Mix well. Drain and stir in apricots. Add nuts. Bake in a greased and floured loaf pan at 350° for 60 to 65 minutes. Cool 10 minutes in pan.Make a glaze by adding some orange juice to the powdered sugar to thin. Punch holes in hot bread and spoon glaze on. (May also be made as small muffins.)
