Ingredients/Components

  • sugar - 1/2 c
  • eggs - 2 item
  • salt - 1/2 tsp
  • flour
  • soda - 1/2 tsp
  • baking powder - 1 tsp
  • shortening - 1/3 c
  • chopped walnuts - 1/2 c
  • can apricot halves - 1 oz

How to make apricot nut bread:

Drain apricots, reserving syrup. Press apricots through sieve or puree in blender. Add enough reserved syrup to make 1 cup; set aside.

Cream sugar and shortening until fluffy. Add eggs, 1 at a time. Beat well after each. Add dry ingredients and apricots, alternately to creamed mixture (begin and end with dry ingredients). Stir in walnuts. Spoon into well greased 9 x 5 x 3-inch loaf pan. Bake at 350° for 50 minutes. Remove from pan. Cool on wire rack.
