Zucchini muffins
Ingredients/Components
- salt - 1/2 tsp
- oil - 1/4 c
- baking powder - 1 Tbsp
- ground cinnamon - 1 tsp
- skim milk - 3/4 c
- whole wheat flour - 2 c
- egg whites, slightly beaten - 2 item
- zucchini squash, shredded - 1 c
How to make zucchini muffins:
Preheat oven to 375°. Grease muffin tins lightly with oil. Mix dry ingredients thoroughly. Mix remaining ingredients. Add to dry ingredients. Stir until dry ingredients are barely moistened. Batter will be lumpy. Fill muffin tins 2/3 full. Bake until lightly browned, about 20 minutes. Yield: 12 muffins.Recipe categories: Breads, Quick breads, Muffins.
