Wilted spinach mandarin
Ingredients/Components
- vegetable oil - 1 Tbsp
- orange juice - 2 Tbsp
- soy sauce - 2 Tbsp
- bean sprouts - 1 c
- can mandarin oranges, drained - 1 item
- fresh spinach - 1/2 lb
- quartered orange slices for garnish - 1 item
How to make wilted spinach mandarin:
Separate spinach into leaves. Swish in cold water. Repeat several times with fresh cold water to remove sand and grit. Pat dry with paper towels. To remove stems from spinach leaves, fold each leaf in half. Pull stem toward top of leaf; discard stem. Blot any moisture from leaves with paper towels.Heat oil in wok or large skillet over medium-high heat. To stir-fry spinach, quickly place spinach, bean sprouts and mandarin oranges in wok. Cook and stir 1 to 2 minutes just until spinach wilts. Transfer to serving dish. Heat soy sauce and orange juice in wok; pour over spinach and toss gently to coat. Garnish, if desired. Serve immediately. Makes 4 side dish servings.
