Ingredients/Components

  • oil - 1 Tbsp
  • ground cloves - 1/4 tsp
  • cloves garlic, minced - 2 item
  • dried oregano
  • cayenne pepper - 1/4 tsp
  • cans chopped green chilies - 2 oz
  • cumin ground - 1 Tbsp
  • diced, cooked chicken breasts - 4 c
  • white beans, soaked overnight in water and drained - 1 lb
  • chicken broth may need more - 6 c
  • medium onions, chopped divided - 2 item
  • Monterey Jack cheese 12 oz - 3 c

How to make white chili:

Combine beans, chicken broth, garlic and half of the onions in a large soup pot. Bring to boil. Reduce heat and simmer until beans are soft, 3 hours or more. Add more chicken broth if needed. In a skillet, saute remaining onions in oil until tender. Add chilies and seasonings; mix thoroughly. Add to bean mixture. Add chicken and simmer 1 hour. Serve topped with grated cheese. Serve with cornbread.
