White chili
Ingredients/Components
- oil - 1 Tbsp
- ground cloves - 1/4 tsp
- cloves garlic, minced - 2 item
- dried oregano
- cayenne pepper - 1/4 tsp
- cans chopped green chilies - 2 oz
- cumin ground - 1 Tbsp
- diced, cooked chicken breasts - 4 c
- white beans, soaked overnight in water and drained - 1 lb
- chicken broth may need more - 6 c
- medium onions, chopped divided - 2 item
- Monterey Jack cheese 12 oz - 3 c
How to make white chili:
Combine beans, chicken broth, garlic and half of the onions in a large soup pot. Bring to boil. Reduce heat and simmer until beans are soft, 3 hours or more. Add more chicken broth if needed. In a skillet, saute remaining onions in oil until tender. Add chilies and seasonings; mix thoroughly. Add to bean mixture. Add chicken and simmer 1 hour. Serve topped with grated cheese.
