Veggie salad
Ingredients/Components
- sugar - 1 c
- vegetable oil - 1/2 c
- salt and pepper to taste - 1 item
- finely chopped onions - 1 c
- finely chopped green pepper - 1 c
- white vinegar - 3/4 c
- can French-style green beans, drained - 1 oz
- jar chopped pimentos - 1 oz
- can white Shoe Peg corn, drained - 1 oz
- can small green peas, drained - 1 oz
- finely sliced celery - 1 c
How to make veggie salad:
Combine corn, peas, green beans, onions, celery, green pepper, and pimentos in bowl. Toss to mix. Combine oil, sugar and vinegar in microwave-safe bowl. Microwave on High for several minutes. Stir until sugar is dissolved. Pour over vegetables; mix well. Cool slightly. Chill overnight to several days, stirring once each day. Season with salt and pepper just before serving.
