Tropical chicken salad
Ingredients/Components
- flaked coconut - 1/2 c
- chopped celery - 1 c
- curry powder - 1/2 1
- mayonnaise - 1 c
- cubed, cooked chicken - 2 c
- can mandarin oranges, drained - 1 oz
- large bananas, sliced - 2 item
- can chunk pineapple, drained - 1 oz
- salted peanuts or cashew halves - 3/4 c
- salad greens optional - 1 item
How to make tropical chicken salad:
Place chicken and celery in a large bowl. Combine mayonnaise and curry powder. Add to chicken mixture and mix well. Cover and chill for at least 30 minutes. Before serving, add the pineapple, bananas, oranges and coconut. Toss gently. Serve on salad greens, if desired. Sprinkle with nuts.Recipe categories: Pineapple, Salads, Chicken.
