Sunshine salad
Ingredients/Components
- salt - 1 tsp
- boiling water - 1 c
- vinegar - 1 Tbsp
- grated carrot - 1 c
- chopped pecans optional - 1/2 c
- lemon flavored gelatin - 1 pkg
- 2 can 2 1/2 c
How to make sunshine salad:
Dissolve gelatin in boiling water. Drain pineapple, reserving syrup. Add water to syrup to make 1 cup; add to gelatin, with vinegar and salt. Chill until partially set. Fold carrot, pineapple and nuts into gelatin. Turn into individual molds or 10 x 6 x 1 1/2-inch pan. Chill until firm. Unmold onto lettuce.
