Ingredients/Components
- salt - 1/4 tsp
- grated Romano cheese - 1 item
- cloves garlic, pressed - 2 item
- cup olive oil - 1/2 item
- - 10 fresh Roma tomatoes, chopped - 8 item
- Fresh basil leaves, torn into pieces - 1 item
- Fusilli or spiral shaped pasta - 1 lb
How to make summer pasta:
At least an hour ahead, combine the first five ingredients and refrigerate. Can be done the day ahead to allow the flavors to blend. To serve: Cook pasta according to directions until al dente. Drain. Toss with cold tomato mixture. Top with grated cheese. Serve immediately.Recipe categories: Main dish, One Dish meal, Penne.
