Ingredients/Components
- olive oil - 1/2 c
- fresh lemon juice - 2 Tbsp
- fresh basil, chopped - 1/4 c
- sliced scallions - 1/3 c
- diced red pepper - 1/4 c
- linguini, cooked - 1 lb
- large ripe tomatoes, diced place diced tomatoes in bowl, seeds, juice and all - 3 item
- cloves minced fresh garlic - 2 item
- diced yellow pepper - 1/4 1/2
- sliced Greek olives - 1/4 1/2
- cubed fresh Mozzarella optional - 1/4 1/2
How to make summer pasta:
Mix everything except linguini in a bowl and let sit for 1/2 hour. Cool linguini and mix with mixture. Lightly toss and add salt and pepper to taste.Recipe categories: Main dish, One Dish meal, Penne.
