Ingredients/Components

  • butter or margarine - 1/4 c
  • chopped onion - 3 Tbsp
  • chopped celery - 2 Tbsp
  • soft bread crumbs
  • salt and pepper - 1 item
  • minced parsley - 1/3 c
  • hot pepper sauce - 1/4 tsp
  • medium yellow squash or zucchini - 3 item

How to make stuffed summer squash:

Cook squash, in small amount of boiling, salted water, for about 10 to 15 minutes, until barely tender. Drain and cut in half lengthwise. Scoop out seeds. Arrange the shells in a greased shallow baking dish.

Saute onion and celery in butter until tender. Stir in crumbs, parsley, salt, pepper and hot pepper sauce. Spoon into shells and bake in a 350° oven for 20 minutes.
