Spinach dumplings
Ingredients/Components
- pkg - 2 oz
- flour - 6 Tbsp
- butter - 4 Tbsp
- egg, slightly beaten - 1 item
- Bisquick - 1 item
- grated Parmesan cheese - 3/4 c
- Parmesan cheese - 1 item
- salt and pepper to taste - 1 item
- grated onion - 2 tsp
- Ricotta cheese - 3/4 c
- spaghetti sauce - 1 item
How to make spinach dumplings:
Cook spinach thoroughly, seasoning with salt and pepper to taste. Squeeze dry and chop up finely. Melt butter in skillet over moderate heat. Add spinach and onion, stirring constantly, for 2 to 3 minutes, until most of the moisture is absorbed. Add Ricotta cheese and cook 3 to 4 minutes longer, mixing well. Remove from heat and let cool.Place cooled spinach in a bowl and add egg, flour, cheese and salt and pepper to taste. Mix all ingredients well, then refrigerate 45 minutes or until mixture becomes quite firm . Bring water and salt to a rapid bowl. Shape spinach mixture into balls and roll in Bisquick. Drop into boiling water, cooking, uncovered, for 6 to 7 minutes, until they are firm.
Gently remove from water and let drain. Arrange dumplings on a platter; pour spaghetti sauce over them and sprinkle with cheese. Serves 4 to 6.
