Spanish rice
Ingredients/Components
- pkg - 1 1/4
- water
- chopped onion - 1/2 c
- can stewed tomatoes - 1 1/2
- thinly sliced zucchini
- frozen corn - 1 c
- instant rice
How to make spanish rice:
In a large skillet, saute the onion. Stir in the remaining ingredients except the rice; bring to a boil. Stir in the rice. Reduce the heat to low; cover and simmer 5 to 7 minutes or until liquid is absorbed; stir occasionally. Remove from heat. Fluff mixture with a fork. Garnish with cilantro and cherry tomatoes, if desired. Makes 6 (1 cup) servings.Recipe categories: Low protein, Low fat, Side dish.
