Rustic lasagna
Ingredients/Components
- clove garlic, minced - 1 item
- grated Parmesan cheese - 1/4 c
- shredded carrot - 1 c
- lasagna noodles - 9 item
- 10 oz - 1 pkg
- part skim Ricotta cheese - 1 container
- shredded part skim Mozzarella cheese - 1 c
- fresh oregano or 1/4 tsp - 1 tsp
- low sodium tomato sauce - 2 cans
How to make rustic lasagna:
Cook lasagna noodles according to package. While noodles cook, preheat oven to 350°. Spray a 13 x 9-inch baking dish with vegetable spray; set aside. In a small bowl, combine tomato sauce, garlic and oregano; mix well. In medium bowl, combine broccoli, carrot, Ricotta and Parmesan cheese; mix well. Drain noodles. Spread 1/2 cup tomato sauce in bottom of dish. Place 3 noodles on top of sauce. Spread 1/2 of garlic mixture. Spoon 1/2 cup tomato sauce over broccoli; place 3 noodles on top. Spread with remaining broccoli mixture and 1/2 cup tomato sauce. Top with remaining noodles. Sprinkle Mozzarella on top. Bake 45 minutes.
