Ingredients/Components

  • sugar - 1/2 c
  • flour - 6 7
  • eggs, beaten - 2 item
  • shortening - 2/3 c
  • mashed potatoes - 1 c
  • tsp salt - 2 item
  • scalded milk - 2 c
  • inch slice of compressed yeast - 3/4 item
  • c lukewarm water - 1/2 item
  • little nutmeg if desired - 1 item

How to make raised doughnuts:

Put yeast in warm water to dissolve. Add salt, sugar and shortening to the scalded milk and let cool. Add mashed potatoes, eggs, yeast, and flour. Let rise in warm place until doubled. Punch down and cut out donuts on a floured board. Let rise and fry in deep fat.
