Ingredients/Components

  • sugar - 2/3 c
  • cinnamon - 1/4 tsp
  • nutmeg - 1/4 tsp
  • baking powder - 2 tsp
  • egg - 1 item
  • shortening - 1/4 c
  • sifted flour - 1 c
  • canned, mashed pumpkin, mixed with 2 Tbsp - 1/2 c

How to make pumpkin muffins:

Sift together flour, baking powder, cinnamon and nutmeg. Cream shortening and sugar. Thoroughly mix in egg. Stir in sifted dry ingredients alternately with pumpkin mixture. Stir only until smooth after each addition. Do not beat.

Fill greased muffin tins half full. Bake in a preheated oven at 350° until cake tester or knife inserted in center comes out clean, about 25 minutes. Yields about 10.

Note 1: Add a handful of raisins just before filling the tins.

Note 2: Mix 2 teaspoons sugar with just a dash of cinnamon; sprinkle over muffins just before putting them into the oven to bake.
