Pumpkin muffins
Ingredients/Components
- sugar - 3 c
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 2 tsp
- salt
- water - 3/4 c
- nutmeg - 1 tsp
- baking soda - 3 tsp
- pumpkin - 2 c
- vegetable oil - 1 c
- chopped nuts optional - 1 c
- sifted flour
- raisins optional - 1 c
How to make pumpkin muffins:
Cream oil and sugar. Add eggs and pumpkin. Add vanilla. In a bowl, combine dry ingredients. Gradually add dry ingredients to pumpkin mixture, alternating with the water. Mix well. Stir in nuts and raisins.Bake at 350° in 4 one pound coffee tins, which have been greased and floured, for 1 hour or until center tests dry. May also make in cupcake tins. Bake 20 to 25 minutes.
