  • shortening - 1 c
  • sugar - 3 c
  • eggs - 3 item
  • vanilla - 1 tsp
  • pumpkin - 2 c
  • salt - 1/2 tsp
  • flour - 3 c
  • cinnamon - 1 tsp
  • allspice - 1 tsp
  • nutmeg - 1 tsp
  • cloves - 1 tsp
  • soda - 1 tsp
  • baking powder - 1/2 tsp

How to make pumpkin cake:

Cream together shortening, sugar, eggs and vanilla. Add salt to pumpkin, then add it to creamed mixture. Mix together flour, spices, soda and baking powder. Add to pumpkin mixture. Bake in lightly greased tube pan approximately 1 hour at 350°.

Delicious glazed with powdered sugar or topped with whipped cream and chopped pecans.
