Pumpkin bread pudding
Ingredients/Components
- cinnamon - 1/2 tsp
- eggs - 3 item
- milk - 2 c
- salt - 1/4 tsp
- pumpkin pie spice - 1/2 tsp
- raisins - 1/2 c
- can solid pack pumpkin - 1 oz
- 1/4 c sugar - 1 item
- to 10 slices cinnamon-raisin bread no crusts - 8 item
How to make pumpkin bread pudding:
Place bread on a cookie sheet. Bake in a 350° oven for 5 minutes. Turn; bake an additional 3 to 5 minutes or until dry. Cut into cubes (should have about 4 cups). In a large bowl, beat eggs; add pumpkin, milk, sugar and spices. Mix well; then add bread cubes. Let sit for 5 minutes; then add raisins. Pour into a buttered 1 1/2-quart baking dish. Bake at 350° for 1 hour and 20 minutes or until a knife inserted in center comes out clean. Serve warm, topped with whipped cream.Recipe categories: Desserts, Eggs/dairy, Puddings and mousses.
