Ingredients/Components

  • butter or margarine - 1/2 c
  • salt - 1/2 tsp
  • cloves garlic, minced - 2 item
  • minced onion - 2 Tbsp
  • cans red kidney beans - 4 oz
  • shredded Provolone cheese about 2 c - 8 oz
  • chopped hot pepper jalapenos or Serranos - 1/4 1/3
  • corn or tortilla chips for dipping - 1 item

How to make prairie fire:

Drain beans, reserving 2/3 cup of the liquid. Mash beans. In a large skillet, combine beans, liquid, butter, cheese, peppers, onion, garlic and salt. Heat and stir until mixture is hot and cheese melts. Transfer to chafing dish or crock-pot. Serve with chips.
