Potato salad
Ingredients/Components
- cooked potatoes - 4 c
- salad oil - 2 Tbsp
- good vinegar - 2 Tbsp
- vinegar drained from pickles - 1/4 c
- dried dill weed - 1/2 tsp
- finely chopped onion - 1 Tbsp
- mayonnaise - 1/4 c
- small clove garlic, crushed - 1 item
- green onions - 2 item
- radishes - 3 item
- hard-cooked eggs - 3 item
- minced parsley - 2 Tbsp
- paprika - 1/4 tsp
- salt to taste - 1 item
How to make potato salad:
Combine potatoes (either hot or cold) with oil, vinegar, pickle liquid, dill, onion and garlic. Set aside to marinate for several hours in the refrigerator. Chop green onions fine; slice radishes thin. Quarter hard-cooked eggs. Add to potatoes with remaining ingredients; mix lightly. Serves 6.This is a classic French potato salad. Add any cold, cooked meat in julienne strips, a garnish of cold shrimp or lobster or additional deviled eggs. All of these may be leftovers.
