Ingredients/Components
- salt - 1 tsp
- baking soda - 1/4 tsp
- all-purpose flour - 1/4 c
- pepper - 1/4 tsp
- small onion, finely chopped - 1 item
- mashed potatoes, chilled about 4 medium - 3 c
- eggs, beaten or equivalent of egg substitute - 2 item
How to make potato pancakes:
Mix all ingredients. Drop about 1/4 cup batter for each pancake onto a hot greased griddle. Cook about 5 minutes or until brown; turn once to brown other side.Recipe categories: Pancakes and waffles, Breakfast, Side dish.
