Pork chops with scalloped potatoes
Ingredients/Components
- salt
- butter - 3 Tbsp
- all-purpose flour - 3 Tbsp
- cooking oil - 2 Tbsp
- pepper - 1/4 tsp
- can chicken broth - 1 1/2
- medium onion, sliced - 1 item
- additional salt and pepper optional - 1 item
- thinly sliced, peeled potatoes about 4 lb - 6 c
- ribs or loin pork chops 3/4-inch thick - 6 item
- paprika and chopped parsley - 1 item
How to make pork chops with scalloped potatoes:
In a saucepan, melt butter; stir in flour, salt and pepper. Add chicken broth; cook and stir constantly until mixture bubbles. Cook for 1 minute, remove from heat and set aside.In a skillet, brown pork chops in oil; season to taste with additional salt and pepper, if desired.
In a greased 13 x 9 x 2-inch baking dish, layer potatoes and onion. Pour the broth mixture over. Place pork chops on top. Cover and bake at 350° for 1 hour. Uncover and bake 30 minutes longer or until potatoes are tender. Sprinkle with paprika and parsley. Yields 6 servings.
