Ingredients/Components

  • salt - 1/2 1
  • pepper
  • Worcestershire sauce - 3 Tbsp
  • chili powder - 2 Tbsp
  • chopped onions - 2 c
  • bay leaf - 1 item
  • can tomato sauce - 16 oz
  • oregano - 1 Tbsp
  • tomato juice - 2 c
  • cans tomatoes - 2 oz
  • chopped green bell pepper - 1 c
  • slices bacon, diced - 4 item
  • pork shoulder, cubed - 2 lb
  • cans kidney beans, drained liquid reserved - 2 oz

How to make pork chili:

Saute bacon until crisp. Drain all but 1 tablespoon fat. Stir in onions and pork. Saute for 10 minutes, stirring constantly. Add salt, pepper, chili powder, bell peppers, tomatoes, tomato sauce and reserved bean liquid. Also add bay leaf, oregano, Worcestershire sauce and tomato juice. Simmer, uncovered, 1 1/2 to 2 hours until tender. Stir in beans and simmer 10 minutes longer. Skim fat.
