  • sugar - 2 Tbsp
  • salt - 1 Tbsp
  • sifted flour
  • olive oil - 2 Tbsp
  • envelopes active dry yeast - 2 item
  • warm water not hot, but very warm

How to make pita bread:

In mixing bowl, combine warm water, yeast, sugar, salt and olive oil. Mix well. Gradually work in enough flour to make a soft dough that leaves the sides of the bowl and does not stick to hands. Turn onto a lightly floured board. Knead until smooth and elastic. Place in greased bowl. Cover and let set 20 minutes. Shape dough into balls about the size of oranges and flatten slightly. Place the balls on floured surface and keep covered with a dish towel to prevent dough from drying. Let set 5 minutes.

Place a large, flat cookie sheet on lowest rack in oven heated to 500°. Roll out one ball at a time to thickness of pie crust, about 1/8-inch thick, keeping it round. Place dough on preheated cookie sheet. As the bread bakes, it will blow up like a balloon. It takes about 1 1/2 minutes. With a large spatula, flip the bread over and bake 1 1/2 minutes longer. Bread should not be brown. Because of its thickness, it can easily be overcooked and will be brittle and crackery.

While one piece is baking, roll out another piece to have ready to place on the heated cookie sheet. Dough should be placed flat on cookie sheet and have no wrinkles, as this will prevent it from rising well.
