  • eggs - 3 item
  • vanilla - 2 tsp
  • granulated sugar - 2 c
  • salt - 1 tsp
  • flour - 3 c
  • nutmeg - 3/4 tsp
  • oil - 1 c
  • baking powder - 1/4 tsp
  • baking soda - 2 tsp
  • raisins optional - 1 c
  • nuts optional - 1 c
  • shredded zucchini - 2 c
  • crushed pineapple, drained - 1 c

How to make pineapple zucchini bread:

Beat eggs, oil, sugar and vanilla until thick. Sift flour, soda, salt, baking powder and spices together and stir into first mixture. Stir in remaining ingredients. Pour into greased 5 x 9-inch loaf pans and bake at 350° for 1 hour. Wrap in foil when cool. Keep in refrigerator or freeze.
