  • cream cheese - 4 oz
  • Cool Whip - 12 oz
  • eggs, slightly beaten - 2 item
  • juice of 1/2 lemon
  • pineapple juice - 1/3 c
  • can drained pineapple - 1 oz
  • large bag mini marshmallows - 1 item

How to make pineapple pudding:

Mix the first 3 ingredients in a double boiler until thick. Cool. Cream the cream cheese in large mixing bowl. Add cooled mix. Add pineapple. Fold in Cool Whip. Fold in half bag of marshmallows. Chill for about 1/2 an hour and serve. Serves 6 to 8.
