Ingredients/Components

  • sugar - 1/4 c
  • salt - 1 tsp
  • evaporated milk - 1/2 c
  • vinegar - 3 Tbsp
  • paprika - 1 item
  • pepper - 1/4 tsp
  • chopped celery - 1/2 c
  • mustard - 2 Tbsp
  • mayonnaise - 1/2 c
  • medium onion, finely chopped - 1 item
  • hard-cooked eggs - 6 item
  • potatoes about 10 - 3 3
  • hard-cooked eggs additional - 1 item

How to make picnic potato salad:

Cook potatoes in kettle of boiling water until tender. Drain. Cool enough to peel. Cut into chunks. Separate yolks from whites. Chop whites and add to potatoes with chopped onions and celery.

In small bowl, mash yolks. Stir in mayonnaise, milk, vinegar, mustard, sugar, salt and pepper. Pour over potatoes. Toss well. Adjust seasonings, if necessary. Garnish with additional egg slices and sprinkle with paprika. Refrigerate.
