Ingredients/Components

  • brown sugar - 1 2
  • dried apricots - 1/2 c
  • orange juice - 1/2 c
  • grated orange rind - 1 Tbsp
  • apple juice - 1 c
  • banana, sliced - 1 item
  • chopped walnuts, toasted - 3 Tbsp
  • Granny Smith apple, peeled, cored and chopped - 1 item
  • dried pitted prunes - 1/2 c
  • stick cinnamon about 2 inches long - 1 item
  • orange, peeled, sectioned and chopped - 1 item

How to make mixed fruit compote:

Combine prunes and apricots in a bowl; set aside. Heat apple juice with cinnamon stick in small saucepan over medium heat until hot. Pour over prunes and apricots. Cover and let stand 8 hours. Remove cinnamon stick and add orange rind and next 5 ingredients; toss gently. Sprinkle with walnuts. Makes 6 to 8 servings.
