Mixed fruit compote
Ingredients/Components
- brown sugar - 1 2
- dried apricots - 1/2 c
- orange juice - 1/2 c
- grated orange rind - 1 Tbsp
- apple juice - 1 c
- banana, sliced - 1 item
- chopped walnuts, toasted - 3 Tbsp
- Granny Smith apple, peeled, cored and chopped - 1 item
- dried pitted prunes - 1/2 c
- stick cinnamon about 2 inches long - 1 item
- orange, peeled, sectioned and chopped - 1 item
How to make mixed fruit compote:
Combine prunes and apricots in a bowl; set aside. Heat apple juice with cinnamon stick in small saucepan over medium heat until hot. Pour over prunes and apricots. Cover and let stand 8 hours. Remove cinnamon stick and add orange rind and next 5 ingredients; toss gently. Sprinkle with walnuts. Makes 6 to 8 servings.Recipe categories: Low protein, Breakfast, Condiments, etc..
