Miniature pecan pies
Ingredients/Components
- vanilla - 1 tsp
- pkg - 1 oz
- butter or margarine - 1/2 c
- brown sugar - 3/4 c
- dash of salt - 1 item
- sifted flour - 1 c
- soft butter - 1 Tbsp
- Filling:1 egg
- coarsely broken pecans - 2/3 c
How to make miniature pecan pies:
Filling:1 egg1 Tbsp. soft butter dash of salt2/3 c. coarsely broken pecans1 tsp. vanilla3/4 c. brown sugar Batter: Soften cream cheese and butter at room temperature. Blend. Stir in flour. Chill for about 1 hour. Shape into 1-inch balls (makes 2 dozen) and place in tiny ungreased muffin cups. Press dough on bottom and sides of cups.Filling: Beat together egg, sugar, 1 tablespoon butter, vanilla and salt just until smooth. Place half of pecans among the pastry lined cups. Add egg mixture and top with remaining pecans. Bake in a slow 325° oven for 25 minutes or until filling is set. Cool. Remove from pans.
