  • beef broth - 2 c
  • long grain rice - 1 c
  • butter - 1 Tbsp
  • salt - 1 tsp
  • eggs - 2 item
  • chopped pimiento - 2 Tbsp
  • In medium saucepan, heat broth to boiling
  • crushed garlic clove - 1 item
  • cumin - 1 tsp
  • taco sauce - 1/2 c
  • egg, beaten - 1 item
  • guacamole - 1 c

How to make mexican pie:

Grease a 10-inch pie plate. In medium saucepan, heat broth to boiling. Stir in rice, butter and salt. Return to boil. Cover, reduce heat and simmer according to package instructions. Remove from heat; let cool slightly. Stir in eggs and pimiento. Press against sides and bottom of pie plate.Filling:1 lb. ground beef1 crushed garlic clove1 tsp. cumin1/2 tsp. salt1/2 c. taco sauce1 egg, beaten1 c. guacamole Preheat oven to 350°. In skillet, cook beef, stirring to break up pieces, until brown. Discard drippings. Stir in garlic, cumin and salt; cook 2 more minutes. Remove from heat. Stir in sauce and egg. Spoon filling into crust; bake for 25 minutes. Remove pie from oven. Spread guacamole over meat. Return to oven; bake 5 more minutes.
