Mexican chicken casserole
Ingredients/Components
- butter or margarine - 2 3
- can cream of chicken soup - 1 item
- chicken broth - 1 c
- tortilla chips - 1 pkg
- medium onion, chopped - 1 item
- Cheddar cheese, grated - 1 lb
- cans cream of mushroom soup - 2 item
- cooked chicken breast - 3 lb
- can Ro-Tel, chopped - 1 item
How to make mexican chicken casserole:
Saute onion in butter in a large Dutch oven or saucepan. Add soups, chicken broth, chicken (coarsely chopped) and Ro-Tel. Heat until bubbly.In casserole, line bottom and sides of dish with tortilla chips. Fill with 1/2 of chicken mixture, then 1/2 of cheese. Repeat, ending with grated cheese. Cover and bake in 350° oven for 30 minutes.
