Mandarin chicken salad
Ingredients/Components
- honey - 1 Tbsp
- orange juice - 1/4 c
- corn oil
- apple cider vinegar - 1/4 c
- Dijon-style mustard - 1 Tbsp
- cooked chicken, cubed - 3 c
- Mrs - 2 Tbsp
- thin celery slices
- can mandarin orange segments, drained - 1 oz
- toasted almond slices - 1/3 c
How to make mandarin chicken salad:
Dressing:2/3 c. corn oil1/4 c. apple cider vinegar1/4 c. orange juice2 Tbsp. Mrs. Dash1 Tbsp. Dijon-style mustard1 Tbsp. honey Put in jar and shake well.Salad: Pour dressing over salad ingredients and mix well (except oranges). Before serving, add oranges.
Variation: Substitute turkey for chicken. Substitute 8 ounce can of chunk pineapple for mandarin oranges. (Prefer unsweetened pineapple, well drained.)
