Ingredients/Components
- butter, softened - 1/2 c
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla
- chopped pecans - 1 c
- pkg - 1 oz
- salt - 1 tsp
- flour - 3 c
- soda - 1 tsp
- eggs, beaten - 3 item
- vegetable oil - 1 c
- can crushed pineapple, undrained - 1 oz
- Add eggs and oil, stirring until dry ingredients are moistened
- chopped bananas - 2 c
- Cream Cheese Frosting - 1 item
How to make hummingbird cake:
Combine first 5 ingredients in large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans and bananas.Spoon batter into 3 greased and floured 9-inch round cake pans. Bake at 350° for 25 minutes or until wooden pick inserted comes out clean. Cool in pan 10 minutes.
Remove from pans. Spread frosting between layers and around sides. Sprinkle with nuts.Cream Cheese Frosting:1 (8 oz.) pkg. cream cheese, softened1/2 c. butter, softened1 (16 oz.) pkg. powdered sugar1 tsp. vanilla Cream the cheese and butter until smooth. Beat in sugar and vanilla until light and fluffy.
