Hot german potato salad
Ingredients/Components
- sugar - 2 Tbsp
- salt - 1 tsp
- cornstarch - 2 tsp
- water - 2 c
- vinegar - 4 Tbsp
- onion, chopped - 1/2 c
- parsley - 1 Tbsp
- white pepper - 1/4 tsp
- green pepper, chopped - 1/3 c
- new potatoes - 6 item
- celery, finely chopped - 1/4 c
- slices bacon and bacon drippings - 6 item
- fresh red pepper, finely chopped - 1/3 c
How to make hot german potato salad:
Boil potatoes. Cool and cut into bite size pieces. Fry bacon. Drain and crumble.In a large skillet, saute onion, red pepper, green pepper and celery in bacon drippings. Remove vegetables. Blend cornstarch in drippings and add water and vinegar. Stir until sauce is thickened. Season with sugar, salt, pepper and parsley. Stir in potatoes, bacon, onion, green and red peppers and celery. Then heat briefly until potatoes are hot.
