Hot german potato salad
Ingredients/Components
- sugar - 3/4 c
- eggs, beaten - 2 item
- vinegar - 3/4 c
- dry mustard - 2 tsp
- salt and pepper to taste - 1 item
- parsley - 2 tsp
- medium onions, diced - 2 item
- slices bacon, diced - 8 item
- eggs, hard-boiled and sliced - 4 item
- medium potatoes, boiled in skin - 10 item
How to make hot german potato salad:
Peel and cube potatoes. Put in oven-safe bowl. Fry bacon. Remove bacon and save. Fry onions in bacon fat until tender, not browned. Mix sugar and mustard; add to onions. Add beaten egg to vinegar and cook until thickened, stirring constantly. Pour over potatoes. Add salt and pepper to taste. Add bacon and egg slices. Mix lightly. Heat at 250° for 30 minutes.
