Ingredients/Components

  • salt - 2 tsp
  • flour - 1/4 c
  • butter - 1/4 c
  • cold milk - 2 c
  • pepper - 1/2 tsp
  • chopped parsley - 2 Tbsp
  • onions, chopped - 2 item
  • medium potatoes, peeled - 8 item
  • scalded milk - 4 c
  • chopped fresh basil leaves - 1/4 c
  • hot potato water - 2 c

How to make herbed potato soup:

Cook potatoes and onions together until potatoes are tender. Drain and reserve water. Put potatoes through a ricer or coarse strainer.

While potatoes cook, melt butter in a large heavy saucepan. Add parsley and basil. Blend in flour, salt and pepper. Gradually stir in cold milk. Add scalded milk and potato water.

Cook over medium heat. Stir constantly until thickened. Stir in potatoes and onions. Heat and sprinkle top with chopped parsley. Serve.
