Green bean and red potato salad
Ingredients/Components
- fresh ground pepper - 1 item
- minced garlic - 1/2 tsp
- canola oil - 5 6
- red potatoes - 4 item
- chopped red onion - 2 Tbsp
- green beans - 3/4 lb
- red vinegar - 3 Tbsp
- fresh dill or basil, chopped - 1 item
How to make green bean and red potato salad:
Combine vinegar, oil, garlic, salt and pepper in a bowl. Wash but do not peel potatoes. Boil until tender. Drain and cool. Skins may be slipped off or left on. Slice into 1/8-inch slices and toss in warm vinaigrette. Steam beans briefly and toss with potatoes. Sprinkle on dill or basil.
