Ingredients/Components
- packed brown sugar - 2 tsp
- water - 1/2 c
- margarine - 2 tsp
- lemon juice - 1 Tbsp
- ground ginger - 1 tsp
- apple juice - 1/2 c
- carrots, cut in 1/4-inch slices about 6 medium - 3 c
How to make ginger-glazed carrots:
Cook all ingredients except lemon juice and brown sugar in a 10-inch skillet over medium heat for 12 to 15 minutes, stirring occasionally, until all liquid has evaporated. Reduce heat to medium-low. Stir in lemon juice and brown sugar. Cook 5 minutes, stirring occasionally until carrots are glazed. Low-fat and low-cholesterol.Recipe categories: Low protein, Side dish, Vegetables.
