Fresh peach muffins

Ingredients/Components

• sugar - 1 c
• chopped nuts - 1 item
• eggs, beaten - 2 item
• self-rising flour - 2 c
• almond flavoring - 1 item
• stick margarine, softened - 1 item
• large, very ripe peaches, mashed - 3 item

How to make fresh peach muffins:

Cream sugar and margarine with a few drops of almond flavoring. Add peaches and beaten eggs. Mix thoroughly. Add flour. Work mixture quickly but do not overmix. Pour mixture into 18 greased muffin cups. Sprinkle chopped nuts over top of muffin batter. Bake at 350° until golden brown. Yields 18 muffins.
